Dessert
A classic Italian dessert rich with chocolate, coffee and creamy decadence. You won’t want to just keep it for Italian themed nights, its perfect any day of the week. This lighter version is only 130 calories and 17 g net carbohydrate.
Ingredients
Serves: 8
- 1 cup (250 mL) 4% MF cottage cheese
- ¼ cup (60 mL) light spreadable cream cheese
- ¼ cup (60 mL) granulated sugar
- 2 Tbsp (30 mL) cocoa powder
- 1 cup (250 mL) 0% MF plain Greek yogurt
- 2 Tbsp (30 mL) coffee flavoured liqueur or 2 Tbsp additional brewed coffee
- ½ cup (125 mL) strong, brewed coffee
- 8 lady finger cookies
- Cocoa powder for dusting
Instructions
- Combine cottage cheese, cream cheese, sugar and cocoa powder in a food processor or blender. Process until smooth.
- Mix yogurt and liqueur and stir into cheese mixture until combined.
- Assemble 8 small bowls, jars or juice glasses [1/2 cup (4 oz) to ¾ cup (6 oz) size]. Break one lady finger into the bottom of each dish. Sprinkle with 1 Tbsp of brewed coffee.
- Top each with ¼ cup of the cheese yogurt mixture.
- Cover and chill for at least 3 hours or overnight. Dust lightly with cocoa powder before serving.
Tips
- Traditions: Typically, Tiramisu is made in a large dish or pan and served using a spoon to scoop the dessert.
- Dress it up: For special occasions, grate a little dark chocolate on top before serving.
- Smaller serving: This recipe can easily be made to serve 4 by halving the ingredients.
- Nutrition know-how: Cottage cheese and Greek yogurt are good sources of protein. Including them in desserts helps to manage the blood sugar response.
