Maple herb roasted Brussels sprouts

These roasted Brussels sprouts are about to become your new favourite vegetable. With crispy edges, and infused garlic and herb flavour, you’ll never go back to boiling them again.

Ingredients

Serves: 6

  • 2 lb (908 g) Brussels sprouts (about 4-5 cups)
  • 2 Tbsp (30 mL) oil
  • 1 Tbsp (15 mL) fresh thyme leaves
  • 1 sprig fresh rosemary
  • 2 cloves garlic, roughly chopped
  • ¼ tsp (1 mL) each salt and pepper
  • 2 Tbsp (30 mL) maple syrup

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Trim and halve Brussels sprouts and place them in a large bowl. Mix in oil, thyme, rosemary sprig, garlic, salt and pepper.
  3. Spread mixture in a single layer on a large baking sheet. If you want crispy edges, place cut side down. Roast for 20-25 minutes until fork-tender. Toss with maple syrup before serving.

Tips

  • Nutrition know-how: Related to cabbage, Brussels sprouts are part of the cruciferous vegetable family, which have sulfur-containing compounds that help protect against certain cancers. They are also high in fibre and vitamin C, and just one provides your daily requirements for vitamin K.
  • Extra special: Add 2 Tbsp (30 mL) toasted walnuts or almonds for some extra crunch and nutty flavour.
